The rye whiskey, made with a mash bill of 65% Balboa rye, 30% heirloom corn, and 15% malted barley, is a masterclass in balance and complexity. Fresh dill and sweet mint dominate the nose, with toasted oak and cocoa notes adding depth. On the palate, pepper and toffee richness are balanced by herbal notes, toasted oak, and supple tannins. The finish is long, with dark chocolate and leather lingering on the palate.
