Four Pillars Gin Uncorks a New Expression with Lark Distillery
In a groundbreaking collaboration, Four Pillars Gin has teamed up with Lark Distillery to release a new barrel-aged expression. This innovative partnership brings together two Australian spirits pioneers to create a unique gin that blends the best of both worlds.
A New Era in Gin Production
Located an hour’s drive from Melbourne, Four Pillars Gin has recruited Lark’s casks, sourced from Tasmania, to create a new expression that balances notes of dark spices, preserved citrus, and malt. To achieve its flavor, Four Pillars Whisky Barrel Gin spends its first four years in a combination of sherry and apera casks before resting in Lark’s barrels for an additional six months.

A Partnership Years in the Making
Headed up by husband-and-wife team Bill and Lyn Lark, the partnership between Lark Distillery and Four Pillars has been years in the making. “Bill and Lyn Lark are true pioneers of craft spirits in Australia and among the first people we spoke to about our gin dreams, so it is such an honor to team up and create something that blends our worlds together,” Four Pillars co-founder and distiller Cameron Mackenzie said. “It’s an exceptional gin finished in exceptional barrels and I can’t wait to get it out there, and share it with our friends here in Australia and overseas too.”
Limited Edition Release
The new expression has been limited to just 2,000 bottles retailing at AUD $175 (USD $114) each. Mackenzie says she’s already begun collecting whisky barrels for further iterations in the series.

Experimenting with Aged Gin
Though aged gin is still relegated to niche status in the eyes of many consumers, Four Pillars has taken the concept in stride. In addition to its flagship sherry- and chardonnay-finished gins, the distiller is currently selling a limited-edition Shiraz Gin aged in dry red barrels from the Yarra Valley winery. Other expressions in the distiller’s inventive lineup include a Peach Gin and a Sticky Carpet Gin distilled with hops.
