He charged forward with a home-brewing kit gifted by his wife, Colleen, a gesture that ignited a passion for distilling that has only grown since they moved to Duluth. “My wife, the poor thing, bought me a home-brewing kit 25 years ago, and that’s how this all started,” he recalls with a chuckle. His wife has remained a steadfast supporter as Evans pursued his dream of whiskey distillation while juggling family and professional obligations.

After serving in the Marine Corps, Evans sought education in finance, eventually establishing a career in corporate America. However, it wasn’t long before the call of distilling beckoned him to leave his desk job and dive into the heart of whiskey.

While Minnesota’s legislative environment became more favorable for craft distillers through the passing of the Surly Bill, Evans seized the opportunity and began laying the groundwork for his spirits brand. The bill reduced the licensing fees for distillers from a staggering $30,000 to a mere $1,000, which allowed entrepreneurs like Evans to experiment with their craft and bring unique flavors to the market.

Collaborations and Community

Before launching his own brand, Evans collaborated with local pioneers Joel and Emily Vikre of Vikre Distillery, who were also on their journey to establish a local presence in the craft distilling scene. This alliance provided invaluable mentorship and resources, allowing Evans to craft his own batches of bourbon using their equipment. “I connected with Joel and Emily and told them I’d love to collaborate, and just went to work helping them get that started,” he reminisces, a testament to his commitment to community and collaboration in entrepreneurship.

Throughout his journey, Evans didn’t just focus on whiskey; he crafted products like Uff Da! Vodka and flavored whiskeys to broaden his reach, ultimately leading to the release of the first aged bourbon from the Duluth Whiskey Project. Now, with the distillery set to release its first batches of meticulously aged bourbon, whiskey enthusiasts are eagerly preparing to experience the fruits of Evans’ labor.

The Launch of a New Venue

This new venture in Lincoln Park is designed with a rustic-meets-modern theme, where guests can savor crafted cocktails amidst an inviting atmosphere. With a seating capacity of 102, patrons will be treated to a fusion of traditional design elements—like reclaimed wood sourced from Superior’s 1893 Globe grain elevator—and contemporary touches such as TVs and a music stage.

“We’re going to have the capacity to be pretty experimental,” Evans explains, hinting at future endeavors that may include peated malt whiskeys. The distillery aims to have a product line that spans several spirits, including gin, rum, and agave-based offerings, ensuring there’s something for every palate to enjoy.

Integral to Evans’ vision for the Duluth Whiskey Project is fostering community engagement, shown through his partnerships with friends like Ryan King, the general manager, and Max Butler, the sales director. They bring a wealth of experience to the table, with King also serving as a local CrossFit instructor who has managed to blend fitness with fine spirits. “I just keep telling Kevin, you just make the whiskey with a pretty face and I’ll take care of everything else,” King states confidently, capturing the essence of teamwork and shared vision.

Butler’s approach to menu design is inclusive: “We’re looking to appeal to everybody,” he affirms.
