In a surprising turn of events, Milam and Greene have released a bourbon that pays homage to what they call ‘The Bullies of the Bird World’ - the Mockingbird. This 128.21-proof bourbon is set to shake up the whiskey scene with its unique flavor profile and avian inspiration.

Milam and Greene’s CEO, Heather Greene, expressed her enthusiasm for the Wildlife Collection, stating, ‘Each release of our Wildlife Collection starts with the selection of excellent, young whiskey barrels, then applying my understanding of how the aging process will affect the final taste.’ The process involves a meticulous study of climate impact on aging whiskey, resulting in a distinct sense of place reflected in each barrel.

Only 173 bottles of this special release are available, making it a rare and sought-after addition to any whiskey enthusiast’s collection. Distilled in Tennessee and aged in Texas, this bourbon has weathered extreme conditions, including an ‘once-in-a-generation ice storm,’ adding a unique character to the final product.

Greene highlighted the difference in flavor profiles between whiskeys aged exclusively in Texas versus those aged in other states, emphasizing the richness and intensity of Texas-aged spirits.

The Wildlife Series aims to showcase the impact of the Texas climate on whiskey production while raising awareness for wildlife causes. The Mockingbird release follows the success of the Golden Eagle bourbon earlier in the year, hinting at a bird-themed trend for Milam and Greene in 2024.

Rikk Munroe, the Whiskey Distillery Manager, shared amusing anecdotes about the Mockingbirds frequenting the distillery, describing them as the ‘bullies of the bird world’ who have a penchant for pilfering ripe tomatoes.

The tasting notes for the Mockingbird Bourbon include hints of glazed doughnuts, old burnished leather, and dark fruit, promising a unique and flavorful experience for whiskey connoisseurs.
